Ingredients:
  • 1 frozen dressed rabbit
  • 1 large onion, cut-up
  • 1 small green pepper, cut-up
  • 1-2 stalks celery, sliced
  • 2 cloves garlic, chopped
  • Salt and pepper
  • 1/2 tsp [or 2.46446 0.00] oregano
  • 1 tbl [or 14.7868 0.00] dried parsley
  • 1-2 carrots, cut-up
  • 3 tbl [or 44.3604 0.00] catsup or tomato paste
  • Cayenne pepper to taste
  • 1 cup [or 225 0.00] liquid (white wine, cider, tomato sauce, or water)
  • Marinade 1:
    • 1/2 cup [or 112.5 0.00] vinegar
    • 2 tbl [or 29.5736 0.00] salt
    • 2 cloves garlic minced
    • cold water to cover.
  • Marinade 2:
    • 1 cup [or 225 0.00] dry vermouth
    • 1 bay leaf crumbled
    • 3 tbl [or 44.3604 0.00] fresh lemon juice
Directions:
Defrost rabbit meat overnight in one of the marinades above. Brown rabbit with vegetables in hot skillet for 5-10 minutes. Place rabbit and other ingredients in crock pot. Cover and cook on low 8-10 hours. Serves 4-6.
