Ingredients:
- 1 frozen dressed rabbit
- 1 large onion, cut-up
- 1 small green pepper, cut-up
- 1-2 stalks celery, sliced
- 2 cloves garlic, chopped
- Salt and pepper
- 1/2 tsp [or 2.46446 0.00] oregano
- 1 tbl [or 14.7868 0.00] dried parsley
- 1-2 carrots, cut-up
- 3 tbl [or 44.3604 0.00] catsup or tomato paste
- Cayenne pepper to taste
- 1 cup [or 225 0.00] liquid (white wine, cider, tomato sauce, or water)
- Marinade 1:
- 1/2 cup [or 112.5 0.00] vinegar
- 2 tbl [or 29.5736 0.00] salt
- 2 cloves garlic minced
- cold water to cover.
- Marinade 2:
- 1 cup [or 225 0.00] dry vermouth
- 1 bay leaf crumbled
- 3 tbl [or 44.3604 0.00] fresh lemon juice
Directions:
Defrost rabbit meat overnight in one of the marinades above. Brown rabbit with vegetables in hot skillet for 5-10 minutes. Place rabbit and other ingredients in crock pot. Cover and cook on low 8-10 hours. Serves 4-6.
